I’ve been looking for a good corn fritter recipe for a while – one that doesn’t produce pancake – like fritters. These are nice and crunchy, and with the lemon and chilli, have a bit of zing to them. I made these the first time with Nicola – and we ate the whole batch between us!
Josh’s parents made this for dinner one night, and it has become one of my favourite side dishes – it is a great winter alternative to fresh salad. It is simple and so very tasty!
My sister and I became obsessed with zucchini fritters after trying the ones at Bar Alto on the river at New Farm. I’ve been dreaming of them ever since, so decided to try my own. The ones at bar alto are sliced very thinly, and made with small zucchinis, but i like my version just as much.
