grilled nectarine & ricotta bruschetta

i look forward to making this delicious breakfast at the beginning of every summer, when my favourite stone fruit arrives - nectarine. i used turkish bread because that is what i had on hand, but i much prefer making this with sourdough or brioche.

ingredients
2 ripe nectarines
4 slices sourdough / brioche / crusty bread
300 g ricotta
2 teaspoons vanilla essence
3 tablespoons honey

method
1. turn on the top grill of the oven.
2. mix the vanilla essence with the ricotta and spread generously over the slices of bread.
3. slice the nectarines into 8ths and place ontop of the ricotta.
4. place on a tray and put under the grill leaving the oven door open.
5. remove from grill once the edges of the bread have turned golden and crusty.
6. drizzle with honey and serve.
